Matt Hobbs - FOUNDER & Chief Executive Officer

Matt has 25 years experience across all aspects of the hospitality sector.

He brings with him a wealth of experience in market leading brands that remain profitable for decades. These have included The Groucho Club, The Ivy, Soho House, Scott's Restaurant, Le Caprice & The Birley Group.

Matt has worked internationally in multiple continents and is proud to say that there is not a business which he has been involved in that is not trading successfully today.

Mimi Monteith

Director

Mimi has been with Copper Beech since inception and has been instrumental to the company's growth. With extensive experience in creative direction, project management and strategic development across a global portfolio of projects, Mimi's expertise has helped drive the success of Copper Beech's and every one of our clients, making her a recognised professional in her field.

She now leads on project strategy and creative direction with a focus on commercial success through guest experience.

Kate Levenstein

Director

After serving as the Membership Director at The Club at The Ivy, Kate went on to establish the highly successful Dover Street Arts Club. In her capacity at The Arts Club, she spearheaded the launch of membership for their latest establishment in the heart of Dubai's DIFC. Alongside this, she also opened their wellness club Lanserhof at The Arts Club.

Kate is a great connector and possesses an unparalleled network of individuals from around the world.

Zachary Elfman

Finance Director

After completing his master's at the LSE, first as an analyst for a PE fund before switching to a global value hedge fund. Zachary is an expert in modelling, fundamental analysis, and valuation.

Zachary has completed the sale of businesses, advised on early-stage funding rounds, and acted as interim CFO for upstart companies.

Fia Freeman

Project Management

Launching her career at Caprice Holdings, Fia managed the successful openings of Sexy Fish (Miami), Scotts (Richmond), Bacchanalia and Scotts (Saudi).

Fia then moved to F&B Project Management for two of the largest venues in London; Tottenham Hotspur Stadium and the O2 Arena. Here, she led the launch of F1 Drive at Tottenham and “The 93rd” Private Member’s area at the O2.

Ailsa Gove

Operations

After graduating with a BA Hons in international hospitality management, Ailsa began her career at Soho House. as senior floor manager, she was involved in the openings of Shoreditch House, High Road House and The Ned Hotel. Ailsa then opened the highly successful Gold Restaurant in Notting Hill as Operations Manager, before moving to William Stanley where she specialised in all aspects of financial modelling, operational strategy and logistics.
